Meaty, well-marbled short ribs on the bone, ideal for braising, smoking, or slow grilling. Also known as "Dino RIbs" because these beef short ribs run 8-12 inches long; much larger than your standard pork ribs.
They come from the plate (the lower belly area of the steer, a section with big, substantial bones). Beef short ribs pack a 1-2 inch cap of meat right on top of the bone, way more than you'll find on your pork ribs. More bone, more meat, more reason to fire up the smoker.
Low and slow is the only way to go with these giants.
